What do I do to find out what damage was caused

The radiator ran completely
dry because cap was left off
the car started making noise I
tried to pull over and the car
died then all of the oil came
out I had the car towed and its
been parked haven't tried to
start it at all I was told to fill
the radiator and to put oil in it

I would do a compression check, and or leakdown test to make sure cylinders still have compression before any thing else, would definitely replace fluids before starting the car again

If all the oil came out it was likely through a hole in the engine made by a thrown rod which means you would need a new engine.
