there is no potentiometer? on the left side of the panel?..okay, menu, select, adjust lighting? guessing now but am sure that is something as simple as this if not offered a manual potentiometer on you left hand near your knee-

...also there may be a sensor on the back of your mirror that senses if it is daylight and is tryin to outsmart us, as modern electronics often will~
I also have a 2007 Taurus. My information panel/odometer lights began going dim just a few days ago. Today they were out completely. This doesn't affect any of the other lights...just the digital display. I hate the idea of having to take it to the dealer...they always seem to need me to spend a fortune. Any ideas?

...yes they've outsmarted us with the BCM (body control module)....responsible for dimming the lights, leaving them on after you've removed the key, everything body and lighting related- ....couldn't possibly be defective...consult your owner's manual on something like this~

piece of black electrical tape over the "daylight sensing" eye.~

Could be weak voltage....get a NEW battery and clean the 1/0 cable connection to the frame/ground with a wirebrush~ that will make it come alive (finally)~
