engine over heating

I was driving my 01 grand prix i had just bought and as i was drivin the temp gauge started  
goin up and then back down when it would go up the heat would turn cold and when it
goes down the heat comes back the temp gauge finally went up to far so i pulled off and
bought some coolant the temp light came on but after shuttin down and letting it cool
down i filled the radiator and the car ran fine but the temp gauge is still goin crazy

Sounds like you have air in the cooling system. You will have ti properly bleed (vent) the air from the system and then top it off with the proper coolant.

I agree with zoneman they are hard to get all the air out of, a cloged radiator makes it even harder to get the air out.
