Hook up to a scanner and see what PCM says for coolant temp.
Possibly a bad temperature sender.
Wouldn't that cause a check engine light? I dont have any lights.

You may have air in the cooling system. Bleed carefully. (I trust you replaced the t-stat with the OE-sized (large bore) one.)
Car reads hot but cool to touch. I have replaced thermostat, radiator, fans. Still have same problem. Can this be a hotspot issue?
