Fuel efficient cargo
I am looking for a vehicle that has seats for
two, loads of cargo space, but gets 30+
MPG. Cargo would more likely be
bulky/messy than heavy, so horsepower is
not a real concern. No need for extra
passengers so I’d rather not have a back
seat to cart around needlessly. Things we
would want to haul at various times: two
large dogs and camping gear, a sheet of
plywood, gardening supplies, large
canvases, bins & crates. Hybrid would be
ideal. Does such a thing exist? If not, what
are my options?

Citroen make a Euro cargo van that gets over 60MPG. Not as big as a typical American cargo van, which average around 15-18MPG. Of all the American cargo vans, the Ford Transit seems to offer the best MPG at around 22-24MPG. Next best might be the Nissan cargo vans at around 20MPG. It really depends on what you consider a "cargo van." Ford Econolines, Dodge Rams, and Chevy Express vans are much bigger than something like a Caravan or City Transit and obviously don't get the same MPG as those smaller vehicles do.
I'm completely open to any kind of vehicle...cargo, minivan, pickup truck...just not sure what is out there with only two seats, some room for gear and a high MPG. I am in the States, so I don't think Citroen is an option, or maybe I'm wrong about that.
I like the Transit idea, but it appears from my limited research that it would not have any better fuel economy than a Chevy Colorado or GMC Canyon. I'm seeing 20/27 for the Transit and 22/30 for these two trucks. Is there a Hybrid version of something like a Transit?

Look on the Ford website but I do not think so. This van might be what you want but be wary as it is a Chrysler product - - 2018 Chrysler Pacifica Hybrid - 34mpg.
