Car tries to keep runnin

I have a 1988 honda accord 1.9 that i just replaced the
carburator and perform a vacuum delete on but after
running it a bit i go to turn it off and it almost tries to keep
running and then sputters off

What is a vacuum delete? Engine run on with carbs used to be common, Check the base idle,this is the speed the engine runs with the idle solenoid disconnected then ser the curb idle, this is the speed the engine usually runs, If you don't have an idle solenoid slow the idle down then check the old carb to find and reuse the idle solenoid. The car had a vacuum system to run the carberator originally but they are not efdective and had problems we took the vacuum system out and the carb that went with it and replaced it with a weber 32/36 carburator and it runs fine its just after turning the ignition off the car tries to stay running but sputters then dies

sounds like it's dieseling , check the float level in the carb. , what do the plugs look like ?
Your old carb had a pilot valve or a fuel shut off valve and maybe an anti-diesel solenoid for this problem. Honda probably spent millions designing the carb for this car/engine/trans, combination that made it start well, run good throughout warm up from idle to wot. and finally shut off when it's supposed to, If you consider yourself to be a better engineer than they are have at it, you need to shut the fuel to the carb venturi off and get the throttle plates to seat tight to the throttle bore when the key is turned off that will prevent run on or dieseling
