esc what does it mean for an 07 sonata gsl

It means Electronic Stability Control. You really won't notice it until you start to lose control of your car in like a snow storm or rain. It basically stabilizes your car and doesn't let you jerk around your steering wheel to try and get back into control, it does it for you. There may be an on / off button that controls it.
