When the oil pressure reads low, it will shut down. I'll bet the motor is not knocking?. What the deal is that there is a screen type basket under the oil pressure sending unit that gets gummed up. Take out the oil pressure sending unit and fish out the screen and clean it. The blockage prevents the oil sending unit from reading proper oil pressure. Common problem. Probably be a good idea to replace the oil pressure sending unit since you have it out.
What Rowefast posted, see if there is a screen under the oil pressure sender. If so, clean or replace it.
I have the same problem and changed the oil sending unit and screen but I still get the low oil pressure ding.. The screen was clogged up and I replaced it. So now I'm still tryimg to figure out the problem.. Can anyone help !! Thanks ..
