can a stuck open thermostat cause my car to run rough like its misfiring

No, unless you have a minor head gasket leak or exhaust leak that goes away after engine warms up. A cold-running engine will remain in open loop longer until engine coolant gets up to operating temps. Most likely your misfires is something unrelated.
