Will just water in your coolant system

Just have one of my cooling fans working would
the car run overheating. ( only water) would
antifreeze make a difference

Anti-freeze does not change the operating temperature. Only water will rust out your engine and if it freezes you will crack the block.

Probably fixing the cooling fan that isn't operating would be the best remedy. Putting just plain old H2O in it is not a very good idea.
