overheating on highway

06 Crysler 300C 5.7L WHAT IS GOING ON?? so i was drivin my car today
an i notice it started over heating so i pulled over sat a second an soon as i
stoped it droped back down!! so i pulled off an soon as i start going 70mph or
80 it start to rises an it never touches the red but it gets close an just droped
back down?? i took it to a mechanic an they said i got blown head gasket but
if they where blown wouldnt i have water in my oil? wouldnt it be over
heating like crazy an not just on high way?? i dont know too much about cars
but i know some stuff!! can someone help me!!!
