overheating on highway

06 Crysler 300C 5.7L WHAT IS GOING ON?? so i was drivin my car today
an i notice it started over heating so i pulled over sat a second an soon as i
stoped it droped back down!! so i pulled off an soon as i start going 70mph or
80 it start to rises an it never touches the red but it gets close an just droped
back down?? i took it to a mechanic an they said i got blown head gasket but
if they where blown wouldnt i have water in my oil? wouldnt it be over
heating like crazy an not just on high way?? i dont know too much about cars
but i know some stuff!! can someone help me!!!

    Replaced thermostat, and waterpump, fans are working still overheating no circulation, blew air thru intake and exhaust ports while water pump off, had flow. What else could it b?
