Chrys. 300t limited

I have a 2005  Chrysler 300 T limited I have been putting back together.  
When it runs it runs great. We have been working on it  for 6 months.
Everything under the hood has been replaced. From the ECM to the
manifold. every sensor except the O2 sensors.  all wires replaced or
repaired.There is nothing left to fix or replace. 2 months ago it started going
into limp mode. only when it is above 40 degrees or after a day of driving. If I
let it sit for a week I can drive it for a day sometimes. what can it be?
Programming???

Is it possible it is the gas pedal sensor going bad causing an intermittent stall, ( limp mode)??
