98 dodge Dakota 5.2

At an idle I get perfect cold ac. As soon as u give it gas, ac
turns to heat. When u stop to an idle, goes back to ac.
Checked freon, freon is full

Your A/C may be overcharged causing excessive pressure at off idle rpm. Excessive pressure will cause the pressure switch to disconnect the a/c clutch causing the compressor to stop compressing until the pressure returns to normal limits. Best bet is to take it to a qualified A/C repair shop.
