Is this normal?

We've had a used 2015 Jeep Cherokee Limited that
started dying (the "fail safe" feature) in the middle of
driving! The oil life gauge stated "good (50%)". My
husband checked the oil and it was empty (we've
had it a month and a half at this point). The dealship
told us to check it every other week. Is this
normal?!?

No this does not sound normal for a 2015. The oil life sounds normal, but it being empty on oil does not. The oil got low enough that it shut the engine down. Need to figure where the oil is going, whether it is leaking or burning it.
Thanks for your feedback. The dealership tried to convince us that they let us drive it off the lot with zero oil. I don't see how that is feasible. Either figure out where the oils going or it's time to trade it back in.
I'm feeling that way too. You would think that they would be honest when a baby is a passenger in the car.
