The car shut off whilst driving, will turn over, check engine light comes on, and timing
belt is fine. I've checked the alternator, the timing belt, fuel pump, water pump, all belts
and hoses. I'm completely stumped as to what is causing it to not start.
When I was driving right before it shut off I felt a loss of pressure *pop* then the car
died five seconds later. Any help is greatly appreciated.

The emergency fuel cut off switch wasnt tripped either.
Is the ECU firing the injectors? You can take off the rail and unplug them all but one and see while turning the engine over. It will make a mess though and have a fire extinquisher handy just in case of the worst. If they ECU is not working you may have a bad ecu or ecu relay / fuse.
Also since the check engine light is on, what are the codes? You can get a cheap code scanner for $15 from amazon if it is 96 or newer and uses the ODB-II system. http://www.amazon.com/gp/product/B001LHVOVK/ref=wms_ohs_product?ie=UTF8&psc=1
Mine did the same. check your vacuum line connectors. mine was corroded barely noticeable but still caused it to die. spent $4 on new part and replaced it. check engine light went off and it ran just fine.
Timing belt and fuel rail check for PSI from the fuel pump that's commonly what happens either the timing belt or fuel.
