How often should the oil be changed? My 2005 Sunfire has only 62,000 miles.

I've  been getting the oil changed every 4,000-5,000 miles since I bought the
car, but friends tell me that with such low mileage, I could wait longer
between changes. What's the best interval, in your opinion?

Keep up the good work! 4-5K miles is a good mark but if you do not drive that far in a year, I would change the oil once per year. Remember, oil gets contaminated from unburned gas and other particulates that will tend to clog your filter just deteriorate the effectiveness of the oil.
