Overheating

I have a 2003 Ford Taurus and it was over heating
so we put a new water pump on and a new
resovoir tank and  checked the fans and its still
doing it... The temp gage says its over heating and
its bubbling in the resovoir tank but its not
smoking, what would be making this do this...

I’m assuming the bubbling is not from heat, but from air in the system. Which would also attribute the thermostat from thinking it’s hot. Bleed the system of air.
