You should take a look at this article on Jalopnik. They recently talked about a '74 260Z in excellent condition that is up for sale currently. Compare it with your car, watch the bidding on it, and go from there. The right person for your car is out there; you just have to find them. Here's the article: http://jalopnik.com/5924774/for-15500- marsha-marsha-marsha
Hey Stephen, I own a 74 260z that I've just restored. I bought my car at a used lot for $3500 running and in pretty decent shape, it was all original, complete and rust free. I would like to ask, on your rebuild did you modify from stock? As well are you still running the 74' Flat top carbs with emissions or are you on 240z' 4screw carbs? In British Columbia, Canada the typical price ranges from $1000-$5000 for a project car. An all original and complete car will fetch far more than one that has already been modified/missing parts. my 11/73 260z is restored and finished, i still think i got a good deal for $3500. the picture was when i bought it from the lot.
That's not my '74 260Z in the article... that's just one I that was mentioned on Jalopnik recently, and it was relevant to the OP's question. I personally don't own a 260Z, nor do I know much of anything about carbureted engines beyond the fact you need to prime with the gas pedal a few times to start the car. Sorry I couldn't be more helpful.
