Ford Escape temperature gage

I have a 2002 Ford escape and my temperature gage goes from the 1/2 to 1/4 after
I take off and when I stop I goes to 1/2.

The car moving causes more air to flow through the radiator which cools the engine, stopping reduces the air flow and the engine heats up. I would check to make sure your engine cooling fan is working and that the radiator water level is good. Check it with the engine cold to be safe.

I check the fluid levels last night and it was low so I added more today and it was still fluctuating

Your thermostat may also need replacing. You might want to go ahead and flush the cooling system, change the hoses and add new anti-freeze.
