any 3.5 liter motor. stay away from the 2.7....without perfect maitn. schedules they sludge up and fail. many dealers actually take traded in intrepids/concordes and install 3.5's before reselling them. although i'm sure a dealer preformed engine swap is probably going to outweigh the value of your intrepid in cost.
I agree about looking to swap in a 3.5L motor, but there is NO WAY a dealership would ever take this car on their lot and try and sell it, let alone swap in a motor themselves and do it. In fact, I would agrue the opposite. As soon as an Intrepid that old is brought in as a trade in to a dealership, they would NEVER try and sell it. They either send it out for auction or maybe down the street to the local used car lot if such an arrangement is in place. But to answer your question, yes, if you truly want to keep the car, consider getting a 3.5L motor installed. If you don't totally love the car, look around for a 3.5L motor in a Concorde, 300M or Intrepid - there are 4 of these kinds of cars for sale in my area all under $6K.
