Once I'm driving, everything is fine. But when I stop, park and turn off engine, I notice
that all my coolant is leaking out, but my car is not overheating which is good. What
causes this to happen?

Water pump giving advanced warning? Check to see if coolant is coming from the "Weep hole" on the water pump.
When the engine stops .. the coolant circulation stops stops with it so whatever heat the engine still is producing has no way of being circulated through the radiator. I have had that happen when I overfill the radiator but normally the water goes into the overflow tank .... maybe it is going there and your overflow tank or hose to the tank is loose or came off
leaking coolant means something is wrong- have the cooling system pressure tested-
Could be the cap ... however, if it holds pressure while driving and unloads when engine stops ... when you get home ... lift the hood as soon as you can and see if you can determine the leaks origin
