The only thing I found was that the touring is ~170 lb heavier than the FE trim.
18 inch wheels vs. 16 inch...
Well also depends on your driving style for mileage we have the grand touring and are doing very well on our mileage and were hefty people.
Also upgraded wheels and tires 17" to reduce the hard bumps and went up one size in height to adjust for the difference.
Short answer is added weight and wider tires. BUT I've got 19,000 miles on my Touring Niro and have been consistently getting 54-55 mpg this summer - that's actual mileage calculated from miles driven. The dash module shows 57-60 mpg. I do drive gently, mostly suburban and beltway in the daytime; but I use the AC liberally. Driving at night takes away about 2-3 mpg, probably due to lights adding to the electrical drain. Winter takes a toll, mileage drops to mid 40s. I suspect cold transmission fluid is a major factor there as early morning 9 mile trip to church in February may show 39-42 mpg in winter, but same trip registers 66-70 mpg in summer.
