Temperature gauge fluctuating between normal
and cold. Never seen that before.

Could be the coolant temperature sensor, you will have to look for it. Usually somewhere near the thermostat housing. Either screws in or slips in. Has an electrical connection to it. You can check it with a multi-meter. Specifications can be located on the net.
