Probably your catalytic converter is plugged. I would also check your fuel pressure regulator. Pull off the vacuum hose & make sure it isn't sucking gas into your vacuum hose. Could also be your throttle position sensor, check with a voltage meter. But most likely your cat.

You should also check your MAP sensor, it tells your computer how much fuel to add to the readings from your O2 sensor, throttle position sensor,& MAF sensor. Are you getting a check engine light ? If you aren't its probably as I said before your CAT.

Might also wanna check your fuel pump. If it's not making enough pressure, it'll bog when you get on it. If you S10 is OBD2, get a good code scanner on ebay or at Harbour Freight "cheapest places". You'll be able to see what your sensors are doing & what your fuel pressure is. I use an Autel code scanner I got on ebay for about $80. Auto Zone can scan you for free.
