Yes, this would be a fine car, as Chevy is popular and many aftermarket parts are available. However, you have to decide how much money you are willing to spend, as restoration can get quite expensive. Also, without knowing the condition of the car, it's hard to say if restoring it will be within your skills and budget. Pay special attention to the condition of the body mounts and trunk pan/floor pan with regards to rust, as you might as well junk the car if the body mounts are gone and you don't know a good welder.

i9 agree with littlehorn , any 60's chevy is a good choice provided you start with a solid enough body to stay in your budget for the car . also check frame for rust through especially around crossmember area and if it came from the snow belt. but if/when you finish it be prepared to meet your next love . is it a 2 or 4 door ??

Good luck with the trim it's hard to find.
Year one has all the part you need not original but still looks good they have every clip bolt washer door panels headliners and even quarter panels practically anything you might need I owned a 65 4 door loved it smooth ride a/c put a 350 and a 350 tuboglide trans headers and flows I loved that car good looks and questions everywhere ...best of luck
