1979 ford f100 cuts off driving but will start running again if gas pedal is pushed all way to floor.

my 1979 ford f100 cuts off while driving at the same time I can push the gas
pedal all the way down it starts running again. I have change these parts
trying to fix it. I rebuilt crab also replaced all spark pugs and wires and coil pus  
Brian box. Also fuel pump and gas lines and new gas tank and gas filter. After
I did all this it ran for about a week and start doing it again.

From what I understand, when the truck kills while driving, without touching the key, you can depress the gas pedal,and it will start running again. Appears to be a fuel issue, could you have made an error in your carb rebuild.
