WHAT COULD CAUSE SKIPPING, POPPING, AND NO POWER

We have a 1988 Ford Ranger it was loosing water, my husband replaced the water pump, thermostat, radiator, clutch fan, then replaced the head gaskets, and manifold gaskets. Its still loosing some water but we were told they ran a little low on water after all this the truck drove good for two days. Then the stalling no power when you push the gas, and the dead skip. So he replaced the o2 sensor, the map sensor, the coil, wires, plugs, distibutor, and checked the injectors. Seems to be running a little worse? Does any one have any suggestions as to what it could be?
