Car overheating

My car over heats , turns off when
stopped, and has also gone to all the way
cool during the same drive. Changed the
coolant tank due to leak. Problem still
persists. Jumps when trying to accelerate,
overheats to the max, then cools, and I
noticed the smell of something burning
when I finally got home and turned off the
car and exited. What might be the problem
if my coolant tank has been replaced. I
may need an oil change but nothing
serious. My AC is also broken and
mechanic told me to leave the fan on to
prevent overheating but doesn't seem to
work

If you haven't done so, replace thermostat first and fill with propper coolant. Run engine to normal operating temperature and see if coolant circulates through radiator. If it does, test drive it. If it doesn't you might have a bad water pump or corrosion in system restricting flow. The smell might also be a bad head gasket or cracked head
Thank you! Another thing. Is my mechanic bad or even a scammer to change the tank and not properly check everything to rule out xyz? I would think so. In my opinion, and through experience of years taking my car to him, he fixes, charges, fixes, charges etc. a good mechanic would thoroughly check a car and state all that is wrong and what needs to be fixed / replaced. Should I get a new mechanic?
Well everybody works different and depends what you tell or ask him to repair. If you take your car and ask how much to replace the reservoir tank, he will give you an estimate based strictly on time to do that. If you ask him to give you an estimate on replacing tank and checking out cooling system, he's gonna charge you more because it's gonna take longer to do the job. It's all based on time and materials. If you are his/her regular client, I would think he/she would do a quick inspection since he had to refill cooling system afterwards but then again, everybody works different and not many mechanics are concerned about quaility or customer satisfaction

I know this is an old post but, the exact same thing happened to me about 1.5 yrs. ago and i had to replace my Head Gasket which was costly 1.4k. Then about 3 wks ago im exiting fwy. and stoppeda at a light and it was happening all over again. I am furious!! is this normal??
