Why can i feel ALOT of heat on my feet when I'm driving, but my heater is on the off position & turned to the coolest setting?

I've had the thermostat & water pump changed recently. And have tried to recirculation
button, which starts a knocking noise in the upper front panel.

That would be your blend door motor. Its either broke away from the door or something is keeping it from opened and closing. Very common problem.
Nope not at all. Just more annoying than anything. As far as fixing it that all depends how mechanically inclined you are. If you can get up under the dash behind the glove box then you can change it yourself. If not take it to a REPUTABLE mechanic, not a new car dealership.
Cool! The blend door motor has to bought at a Chevy dealer. It selects where the air comes into the car. Fresh air or heat from the heater core. When they go bad as in your case they stick open and let hot air into the car. Just like if you had the heater/defrost on. When you take it apart you will see what I'm talking about. Good luck!
