My temperature gauge on my 2003 trailer blazer
starts at 210 when I start the car up

So it stays at 210 all the time cold or hot? Could be stepper motor behind gauge, or more likely the actual temp sensor itself. Luckily for you, in 03, the temp sensor is located right above the thermostat. Cake.
