I replaced the heads, gaskets, water pump, and timing belt. I am now getting water in my oil without having started the car once. Before replacing these I did not have water in my oil.

Sounds like heads not torqued properly or head gasket installation issue. When you removed the heads could the water possibly got in there then and you are just now noticing it?
I actually didn't have this problem until after changing the water pump. I checked the oil after replacing gaskets and no water. I then started the car for a few minutes then replaced water pump and now have water in the oil. I am very baffled I haven't even started the car after replacing the water pump so have no idea. Thanks
I advice to do a compression check. This will possibly give you the answers you need.
