How do we protect ourselves during a test drive?

First of all use your common sense as a lot of people will want a joy ride. Take a DL photo, go along on the drive and meet in a safe place like a police station parking lot. I would also make sure they have the money before you let them touch your car.

If this is a really valuable Vette I would drive them and not let them drive it at all.

Also, bring a friend or family member so you're not alone. Jim
