i have a 383 stroker with an edelbrock intake and a 750 edelbrock carb. is the carb too big?

nope just right for street use buddy, if it were a drag car with a 383 that could really breathe (such as AFR or trick-flow heads with intake and headers) you shoud go with a 850.
i got carb questions also. i got a 355 with the edelbrock rpm top end kit, dont know if my 650 is enoughf? had many people say it will be plenty but the thing falls on its face in 3rd gear just dosnt seem to be making its full power potential
To Adam: A 650 should be more than enough. You can find calculators on line to determine what size carb you should run, but they will also say that a 650 will work. A 355 will only need a bigger carb if it is highly modified such as high compression, has great heads, and runs in a higher rpm range than the average 350, say over 7000 rpm's. The kit that you have would not require it. You might get a slightly higher top speed with a bigger carb but it will suffer in the low rmp range
