Engine cutting off mid drive- 91 chevy silverado 1500

Ive had the truck for just over a year now. When i first bought the truck it had a slightly rough idle. I've replaced spark plugs & wires, Heat sensor, Ignition & distributor, battery & alternator. It idles perfectly and drives much smoother than ever before but for some reason the engine sometimes cuts off mid drive and than wont turn over when i try to start it. After some time i can sometimes get her to crank up again and occasionally start.
Ive heard that it may be a burned ignition coil but after removing it and testing it, the ignition coil proved to be in working condition.
Fuel injectors have a nice even spray so i don't believe it could be fuel related but i have been wrong before.
Running out of ideas. Thinking about replacing the starter and single valve temp gauge next. please let me know if you have any suggestions. would love to get this issue solved once and for all.
