DODGE 2500 OR 3500?

I pull a 7000/8500 pound when fully loaded toy box trailer for catering. My current truck is a 1999 diesel 2500. I'm looking
at a 2008 2500. should I go to a 3500 instead?
Trailer is used for catering only. i have 360 pounds of fresh water - 200/600 of barbecues that come out when i get to job site. 300 to 600 pounds of food to prep/cook/sodas/waters etc inside the trailer.
I dont put more than 500 in the back of the truck normally when I pull the trailer.

Either choice should work, I don't think you NEED to bump up to the 3500, but if you want to, that's a personal choice.
u should u wont need sway bars and you will have a lot more control of the truck when pulling go with the 3500 w/duals
i drive an 05 2500 for work (oil patch) and no problems other then the 5.9 losing compression in #1 cylinder. ive towed up to 9000lbs between the skidsteer on trailer, 615l fuel tank filled with diesel and 500lbs of tire chains in box no problem besides being a little underpowered with 3:73 gears... now ive also driven my bosses 07 a few times and been in it while towing a snowcat on 5th wheel trailer...no difference really in how it pulls just ride quality (4:10 gears)...the 3500 is a stiff truck compared to the 2500... depends on what you like i dont think your overloading the 2500 but u might want some gears like 4:10 if your going to be pulling loads like that (easier on the drivetrain)
I drive an '08 ram 2500 with the 6.7 and it works perfect for pulling, right around the same weight your pulling, you really dont need dually's in the back for your weight load, in all honesty you really dont need the 3500, it rides rougher when empty and the only change from 2500-3500 is an extra leaf in the back so if you going to be carrying a bit more and it feels saggish sometimes you can allways put overload air bag assists in to help out.
IVE A DODGE 3500 1999 PICK UP,,,DEISEL,,,THE REVS ARE VERY ERATIC WHEN DRIVING,,ONE MINUTE ITS FINE THEN THE REVS START GOING UP AND DOWN FOR NO REASON,,THE TRUCK HAS A TORQUE MODULE FITTED WHICH IVE NEVER USED,,ANY IDEAS....
