What would be the normal coolant temperature on a Pontiac Solstice?

Finally figured out how to check the temperature on  my Solstice. Was ranging  
from 190 to 207. Is this normal?

Yes that is normal operating temperature for a 195° thermostat.

NORMAL... NORMAL... UNLESS SOMEONE REPLACE THE THERMONSTATE WITH A A LOWER ONE ...STOCK IS 195 o SO YOU SHOULD RUN BETWEEN 195-210 GIVE OR TAKE

Depends on where he is checking the temperature at.

If the thermostat is going bad and opening too soon or not regulating coolant flow properly, it will usually show a lower temperature in cooler outside weather and higher in warmer outside temps. The range should be close to the stock reading mentioned already, which is 190 to 210 degrees. This will fluctuate during driving but be fairly steady at highway speeds.
