Change your oil filter. I don't know if the Chevy/GM products work the same way but years ago my Ford had a clogged filter....the pressure backed up and pinned the needle on my aftermarket oil pressure gauge then the filter blew up. Literally. But is strange you can't see oil on dipstick..are you sure? not just real clean?

the dipstick tube could be of, perform an oil/filter change, and check the level. if doesn't show any oil in the stick deffinitly the tube has to be repositioned, and if the hich oil pressure still reading high replace thee oil sending sender ia a very common issue. good luck.
