My a/c stopped blowing cold air and now I'm
leaking coolant from the back of my motor... what
happened

Sounds like your heater core hose broke back behind the engine. I would have a look to see exactly if that is the case then address the a/c issue. You probably lost quite a bit of coolant.

I recently replaced the intake manifold because a hose busted off a valve on the back of the intake... cost me $600... what is the possibility of it being a freeze plug?

Could be (FREEZE PLUG) but also could be from the new intake gasket. Going to have to confirm by putting an eye ball on it.

It ran hot stopping ac from cooling, check for broken nipple on intake at heater hose.
