Is it ok to put 215/55R16 on a 2005 Ford Taurus
rather than the 215/60R16 that generally come on
it?

No problem but they will be a little shorter. I would go with 225/55/16's instead.

... they will be a little wider, because the first number is the height from the rim out / the larger the number the taller the tire height, the second number is the width of the tire / the smaller the number the wider the tire, and the last number is the size of the wheel / rim.
