I have the standard 16 inch rim on my 1999 gmc
sierra . my tires are 265/75/16. Im wondering what
the biggest tire i can fit on that size rim?

I am sure you can go up a size or two without clearance problems. Perhaps a 285/70/16 would be what you want.
