I have a 2002 GMC Sierra 1500 4x4. The stock tire size is 245/75-16 (too small) but the biggest size TireRack is 265/75-16. Can i go bigger w/o lift or rim size change and not rub?

To that size yes it will be a little less than an inch wider and a little more than an inch taller. It will change your speed. You will be going faster than what your speedo says.
