2000 Jeep Grand Cherokee Laredo
suddenly won’t start. Instrument
panel shows key icon w/slash
through it... and nothing else!

That key icon is saying the ECM does not recognize the key as being correct. If the proper key is on a ring with a bundle of other car keys, remove them and try again. Maybe disconnecting the battery will reset the ECM. Make sure battery is at least 12.0 volts too. You can scan for codes. Turn the key from OFF to ON three times quickly without starting the engine. Stop at "ON". Problem codes will display at the odometer. Google the codes, is any.
