I have had to add coolant to my 2000

Check the drivers and passengers floor to feel if it is wet or damp if so the heater core is leaking.

It it is not leaking out on the ground, or onto the passenger floor it might be going out the exhaust due to head gasket or similar issue. Have the cooling system pressure tested and also test for combustion gases in the coolant. A small head gasket leak or cracked cylinder head might exhibit no other symptoms except coolant loss.
