If my car was parked with barely any water in it but enough to push out two freeze plugs could it have caused any problems

A cracked block is a possibility but hopefully the freeze plugs averted any real damage. Next time use anti-freeze!

That's what freeze plugs are for, Literally. To keep the block from cracking when it freezes to the point on no return. The laws of physics are that nothing, not even the strongest steel can resist cracking when the one and only substance known expands instead of condensing when frozen - that being water. And Ditto -Next time use anti-freeze! The damage is the hassle of replacing freeze plugs. The plugs are dirt cheap, but getting them in is expensive
