I have a 01 subaru outback h6 'll bean and I want to change my tan interior to all black including seats and carpet and headliner but don't know where to look?

Look for a good used set from another car. Buying new will cost more than the car is worth.
This could be expensive, why do you really want to do this, or was the interior damaged?
Have you priced out this with a local interior shop, or how close are you to Mexico?
Look into leather dye. You might be able to re-dye the leather and replace the headliner.
Just a wild guess but this could easily set you back $5,000.
Actually, your car is 15 years old and unless you plan to keep this for another 10 years, I think you're making a mistake. Dark interiors are hotter, and if your objective is to not see as much stains, I can tell you that you'll still see them. I sort of wish my car had the lighter interior just because it's cooler. Now, how many miles and what kind of condition is your car?
I agree with Full of Regrets, unless you go to Tijuana or somewhere like that. There's even some better prices here in LA, but, you've got to go where they have lots of interior shops. If you're in a more limited market, it's going to be prohibitively expensive. I don't think it's worth doing at all.
Take the money and get a newer car, the interior you want, better fuel mileage, lower miles on the clock and more reliable car. Much better solution.
