would i be able to cut roof behind drivers/passengers seat, take rear seats out, put bed in, weld doors
shut, up suspension in the rear, & put in a roll cage to stiffen up frame?

sounds like a lot of work. I would just get a small truck if you really need one.
Unless you are really good at chopping and welding I would advise against it. If the cutting is done incorrectly, the whole structure could be compromised. Just like the 1990's Le Baron convertible, the torsional rigidity is compromised.

If you're feelin' skippy with the sawzall...and have plenty of time...do some engineering first...do not cut structural members....have fun...isn't that what it's about?~

such things as welding a front wheel drive onto another front wheel drive has been done...nutty and laden with technical problems...might have been watching "the RED GREEN show"~

your dry cleaners should not charge you for hangers* (welding rod, to us)....similar experience with trying to make a new floor for a '71 FIAT 850...was VERY difficult to align the structural members and keep the seat tracks from changing position and immobilizing the seat....12 ga sheet was TOO heavy...one thing you may consider when you actually PLAN your attack~
probably would be better off getting a VW truck, wonder if the 4" exhaust tip could be used as its designed for a diesel. does me no good to keep it unless you know someone that wants to take it off my hands.
