Coolant level light is staying on, car is
not running hot, coolant level is where
it is supposed to be. What could be
wrong with it?

First make sure your coolant level sensor is pluggled in and if so you could replace it pretty cheap and easily to find out if it's the issue/test the wiring with a basic multimeter
