Why would my truck oil light turn on if there
is oil? And then truck died and will not start
just clicks when trying to start

Oil pressure sensor. Designed to shut off to save engine. Check circuit first then sensor.

You could have blown the engine. Did it make any unusual noises when the oil light came on? Checking the oil level is the first move and second is replacing the oil pressure sender.
