2002 S10 acting strange

I have a 2002 Chevy S10 with the 3.4 L V6. When I start it up it runs and idles fine for an indefinite period of time. When I drive it however....after about 10 min the check guage light comes on...the temp spikes up to 240+...then it sputters and dies.
After waiting a few minutes, I restart and all is well. Idles perfect, no lights, no temp...drive 10 minutes then bam! All over again!
Just started this today. I put in new radiator, water pump and thermostat but no avail! Any thoughts??

sounds like the tem sensor is messing up or grounding out somewhere. Getting a false reading and making it go into limp mode
