97 Ram 1500 temp gauge and smoke issue

97 Ram 1500
Replaced temperature gauge about 6 months ago.
It keeps going up and down and staying about 220
to 260.
I drove about 20 miles got out and checked hood it
was cold. Popped hood and the radiator and cap
were both cold. I ran my hand above first to feel
any heat.
Then drove another 25 miles and turned it off.
Checked this time the hood was still cold as was
the cap and left side of the radiator. The right side
was warm with a little bit of steam coming out.
Not colored smoke just steam like pouring boiling
water type steam.
I am using antifreeze quite frequently roughly every
6 to 8 weeks and no leaks.
I also need a piece for my evap system, cant recall
its name though. My check engine light is on as is
my brake lights even though front was just dkne
and back brakes are fine.
Truck has 143876 original miles. I am the 3rd
owner.
Any suggestions to help me out?

Condition of oil? (Watery consistency & coloration) what codes is it giving?

Pil change is due in about 400 or so miles. It was about 1/4 of quart low a few days ago and I filled that up. Code? I cant recall the code for the evap issue. Had that checked at Advanced Auto. Plan on taking it over hopefully tomorrow to get that ran again. Brake lights one says ABS and other is in red saying brake, check engine, and the low washer fluid. That is not a major thing has a hole that leaks. I am hoping to get possible answers as to what to can be from easy fix to major so I can start ruling each out. I love my truck I dont want to sell it. Love that style of Ram.

Sorry forgot to add oil co sostency looks normal. No milky substance or color. Also tonight I noticed it took a lot g time for the heat to fully get hot. It usually warms up pretty quickly. My a/c does not work at all have to figure out that when it gets closer to sunmer.
Wanted to try ruling out the major issue first (blown head gasket) exhaust fruity/sweet smelling? (Use common sense when testing, dont bury nose in exhaust lol) with the fact that oil sits on top of water, I would do a drain plug trickle test (loosen enough to allow oil to trickle to confirm consistency) aside from that, I would suspect a pinhole pressure leak, air in coolant lines, or plugged radiator. Top off radiator and reservoir, allow to run at temperature with heat on high and directed at floor vents. Make sure reservoir doesn't go empty, and while doing this, watch for pinhole leaks, paying extra attention to the right side of radiator, water pump areas. The fact that the left side of radiator was cold, I would recommend flushing the radiator first. It could also be a seam leak on the radiator that only opens under pressure

Exhaust has no smell although I do smell something like hot rubber after driving for a bit. Tonight I drove about 2 miles. I put the last antifreeze in before I left. When I turned on the truck I heard a swooshing sound like water trying to move coming from the passenger side of the dashboard. It stopped about a minute later. I was going about 5 minutes so stop n go, stop n go since I was in a drive thru. My home is less than quarter of a mile and gone about 10 minutes. Temperature gauge was at 220. I popped the hood again it was not hot but I touched the black hose to the right of the radiator that comes around to the left side on top of the engine and it was very hot. The engine area felt warm to. I could feel the warmth without touching it. I am running out of ideas as to what the heck is up with this truck. I have to drive 200 miles on Christmas day and I am worried "Dixie" wont make it. I live that truck. Silly but this is my dream truck. Love 2nd gen Dodge Rams. Any ideas, suggestions would be very welcome
Starting to sound more and more like a blockage in the radiator. As for where the coolant is going.....might be leaking out from heater core connections once Dixie has coolant pressurized. And I'm still suspicious of the head gasket. Keep an eye on the oil fill cap. The milky coloration will be visible there first
